Description

This water quenched aogami 2 honyaki series is hand forged at Nakagawa Hamono (formerly Shiraki Hamono) by the super talented blacksmith Nakagawa-san and hand ground with a graceful thin convex grind and beautiful finish bringing out the more subtle aogami hamon line by Mitsuaki Takada at the Takada no Hamono workshop. They have fine cutting feel with excellent edge life and edge formation, and represent an exciting new generation of Sakai craftsmen putting out top quality work. We are super excited to be working with Takada no Hamono. Takada no Hamono water quenched aogami 2 honyaki is superb, tough, nice to sharpen and with great edge life. Mitsuaki Takada has spent many years as a grinder in Sakai and specializes in double bevel hamaguri style convex grinding. He worked for Ashi Hamono for many years, and is very skilled at grinding thin double bevel knives with excellent cutting feel. Takada no Hamono opened in 2018, in the old style of a small wood frame house converted to a workshop, there are dozens of atelier like this in Sakai but Mitsuaki’s is the first of it’s kind to be opened in many, many decades. Water quench honyaki is a very difficult process especially with aogami, not all knives sold as water quench honyaki truly are such. Water quenched honyaki is more brittle than oil quench which is in turn more brittle than san mai 3 layered blades. These knives demand skilled use and will not tolerate mistreatment. For instance, smashing garlic with the side, hacking at hard items or dropping the knife will most likely break it. For that reason these are not guaranteed against breakage. This is a reactive carbon steel. It should be mentioned that extra care is required, as the knife is not stainless and should be dried immediately after use. It will develop a dark patina with usage, but any orange rust should be removed with a light abrasive. These knifes come from the maker with lacquer on the blade for corrosion protection during shipping. It can be removed using acetone or lacquer thinner (follow manufacturers instructions for use). Hand forged and ground by blacksmith Takahiro Nihei, a very talented blacksmith who spent some of his formative years training at Yoshikane Hamono in Sanjo. Nihei-san runs his own workshop now and while the Sanjo influence is clear in the robust style with a very pronounced distal taper. Aogami super is famous for it's edge duration, the addition of tungsten and vanadium to it's alloy make for a toothy cutting feel as the edge begins to dull, aogami super holds its peak sharpness well but really gets its duration from it's ability to cut well as it dulls. These have a robust feel but a thin grind behind the edge for smooth cutting but are best suited for those familiar with the demands of a Japanese knife. No twisting or scraping the edge and especially no cutting bones or other hard items.

Hand made in Sakai forged by dentoukougeishi master smith Kenji Togashi and expertly ground by his son. Stainless clad aogami 1 is a less common combination as it is more challenging to work, but it offers a great combination of the aogami 1 carbon steel's fine edge formation and long edge life with the stainless steel's ease of use. These are super easy to sharpen with a long edge life and smooth cutting feel with nicely finished corners. Slightly larger than usual geometry for a Sakai gyuto, but still following that style. Macasser ebony and light colored horn handle are a nice compliment. *Handle varies from one in photo*

Hand forged and ground in Sakai, the Kikuchiyo Manzo series knives from Hitohira represent excellent Sakai craftsmanship. These are characterized by a forging and heat treatment that offers an easy sharpening, good toughness and excellent edge life. Deep ground ura hollow grind on the inside makes for excellent food release and helps to keep a narrow urasaki throughout the life of the blade and a polished spine and heel are a nice touch. Manzo, son of famed Sakai sharpener Kambei, carries on the family lineage of extremely high quality wide bevel work. Kambei along with a few other Sakai sharpeners pioneered the style of wide bevel on double bevel knives.
