A Unique Big Island Favorite: Kaʻu Giant Maragogipe Maragogipe is a unique giant bean coffee that is considered a top-tier variety by coffee connoisseurs around the world. As one of our top requested coffees, it’s highly sought after and offered just a few times each year. Maragogipe has been planted in a handful of farms across the Hawaiian Islands, most notably in the Ka‘ū district, but usually planted in very low numbers and scattered amongst the more dominant varieties like Typica and Caturra. Maragogipe is a natural mutation of Typica (an Arabica species) that was first identified in 1870 in the Brazilian city of Maragogipe. It’s often referred to as “elephant bean” coffee. For over a century, it was considered an inferior variety, as its low yield and rust susceptibility made it unfavorable compared to more common commercial varieties. Hence, coffee growers commonly replace it with varieties that have stronger yields and improved disease resistance. This Kaʻū Maragogipe is milled in small batches and roasted to order. Kaʻu Morning Glory | 100% Kaʻu Coffee

Our honey-processed Kaʻū Morning Glory is our bright and sweet signature Kaʻū coffee. It’s notable for long and juicy fruit tones, a medium-full body, and a sweet candied nut finish. Despite the reference to honey, no apiary products were used in the making of this beautiful coffee. Like “natural” or “washed,” “honey” is a coffee processing method; the important step of separating the outer layer of a coffee cherry from the inner seed or “bean.” When the skin is removed, sticky, sweet mucilage is exposed and its golden amber color is reminiscent of honey. Hence we call it honey-processed coffee. Delightful for espresso or pour-over, our yellow honeyed Kaʻū coffees are rich yet mellow, never bitter or acidic. The flavor notes are often similar to real honey: floral, sweet, buttery, and smooth with an ever-so-slight hint of fruit and blossoms. Often you'll catch the aroma of vanilla, nougat, or honey, regardless of the roast level.
