As a dip, spread, or condiment, the Gorgonzola DB Cheese Spread has already done all the hard work. Your love of blue cheese is reason enough to always keep this on hand. The Story Gorgonzola is made in a two-day process. Curds from the first day’s milking are swept to the sides of the form, creating a bowl to accept the curds from the second day’s make. Back in the '40s and '50s, it was not uncommon to see our founder, Danny Di Bruno, with a giant spoon in hand behind the counter, scooping out our spreads onto wax paper for customers in our original Italian Market shop. Usage Tips Hopping onto the buffalo bandwagon is a cinch with Gorgonzola Cheese Spread. Schmeared onto flatbreads or toasted hoagie rolls, you’re ready to receive a crispy chicken cutlet dressed in Blis Blast Hot Sauce, but a BLT handles this addition just as well. Don’t underestimate the timeless crudité. A platter of celery sticks is easily rejuvenated when Brooklyn Brine Chipotle Carrots, Crisp and Co. The Story Made by brothers Todd and Maugan (pronounced Morgan) Trethowan of Gorwydd Caerphilly fame. In 2014, in search of the most luscious grasslands for their cattle, the brothers moved the family farm to Somerset, England, within five miles of the town of Cheddar.Compelled to honor the cheesemaking tradition of the region, they started producing Cheddar in 2018. They set out to honor the following criteria:1) Pitchfork must be made as traditionally as possible.2) We will use only organic milk.3) We will use only raw milk.4) We will create a finished product that emphasizes the terroir, which is the reason we moved here in the first place.5) We will comply with the standards of Artisan Somerset Cheddar.They have succeeded mightily. It is expected that they will be the fourth producer (along with Montgomery, Keen's and Westcombe) to officially be granted the status of Artisan Somerset Cheddar by September of 2019. The highest graded batches of Pitchfork Cheddar are selected by Neal's Yard Dairy, where the cheese is carefully aged and monitored in their cellars for 12-15 months before export. The dense paste is pierced with spires of crystallized amino acids which interlude the harmony of sweet and savory notes. The Story Parmigiano Reggiano is nursed to perfection by master producers, affineurs and graders. Raw grass-fed cow’s milk is transformed into one of the most essential cooking ingredients on the planet with the utmost care and precision over the span of its 24-month production. Made in copper cauldrons, partially-skimmed morning milk and whole evening milk is formed into 75-85 pound cylinders. After 12 months, each wheel is hand-inspected by a master grader from Il Consorzio del Formaggio Parmigiano Reggiano and if it adheres to their measures of quality (which include being tested for distinctive tonal ranges with a hammer!), its rind is branded with the consortium’s insignia. Parmigiano’s dynamically aromatic and texturally complex character owes itself to its molecular composition. It develops its characteristic amino acid crystallization during aging as proteins breakdown and its fragrant notes of umami and the Mediterranean Sea are owed to its high level of the amino acid glutamate.
