Rathskeller Revival Batch 002: Consolidated Kingdom Age: A blend of Double Oaked 16, 13, 11 and almost 9-year bourbon Proof: 117.2 proof Source: Kentucky Blend:  Tasting Notes: Candied oranges, tobacco, dehydrated strawberries, and sassafras. Rich, deep, and complex, the nose continues to build as it sits. Touches of sweet oak and baking spice begin to open up. The palate is buttery and sweet upfront. There's toffee, dried cocoa powder, and vanilla custard. It's decadent and has a creamy mouthfeel. It coats the palate with notes of sweetness and spice, reminiscent of a sweet potato pie. The layered flavor builds into a nice peppery spike towards the back of the palate. The finish is long, with notes of peach tea and oak. Notes of toasted almonds and pear linger long after the last sip. Story: A blend of Double Oaked 16, 13, 11 and almost 9-year bourbon from four Kentucky Heritage Distillers. Rathskeller Revival "Consolidated Kingdom" batch is about amplifying a bottle through blending. Independent bottling aims to show what could happen if industry walls fell. That’s the spirit behind Rathskeller Revival Batch 002: Consolidated Kingdom.   This blend is a combination of four barrels. Each barrel had a unique finish time. But, three of the barrels utilized 72-month air-dried stave barrels from ZAK Cooperage. The long air drying process removes the majority of the oak tannins. We're left with milder oak notes and richer caramels and toasted vanilla notes.   Rathskeller Revival has always been about honoring history while pushing it forward.
